Artichokes contain a substance called silymarin which has cancer-fighting properties. Silymarin is a strong antioxidant, and studies have shown that it has the ability to prevent skin cancer. As food for cancer patients, artichokes are best prepared by steaming or boiling. Other modes of preparation can lead to the destruction of the antioxidants in the vegetable.
Kiwifruit contains components that can prevent the mutation of genes. The growth of tumors is often a result of gene mutation, and this can be reduced by a compound called glutathione, which is found in kiwifruit.
Kiwifruit also contains Lutein, a chemical that has been found to reduce the risk of prostate cancer and lung cancer. Kiwifruit has the fourth highest levels of antioxidants, which have cancer preventing properties.
